The Venetian cuisine is part of the\u00a0thousand-year history<\/strong>\u00a0of the Serenissima republic. It represents a\u00a0unique gastronomic heritage<\/strong>, an extraordinary crossroads of cultures and flavours.<\/p>\n

As an ancient maritime city, Venice has its own distinct cuisine, combining\u00a0ingredients from many other kitchens\u00a0<\/strong>such as Arab, Jewish, and more generally from the East, as well as from Northern Europe.<\/p>\n

The Venetian culinary tradition features, for example,\u00a0dried cod from Norway<\/strong>\u00a0(called\u00a0baccal\u00e0<\/a><\/em><\/strong>\u00a0by the Venetians), or\u00a0rice and exotic spices from Asia<\/strong>. In the past,\u00a0sugar, raisins and almonds<\/strong>\u00a0(used in many Venetian recipes) came to Venice from the Eastern Mediterranean; from Istria, Puglia and Greece\u00a0oil and wines<\/strong>, all expertly blended with indigenous products,\u00a0fish and game of the Venice lagoon<\/strong>, and the\u00a0fresh vegetables<\/strong>\u00a0of the islands and the hinterland.<\/p>\n
