Venice\u2019s Jewish cooking<\/a><\/strong> is descended from kashrut<\/a><\/strong>, Judaism\u2019s food laws, as well as from the extraordinarily diverse traditions<\/strong> of the Jews who settled in the ghetto over the centuries: the Germans, the Italians, the Levantini<\/em> (from the Ottoman Empire) and the Ponentini<\/em> (from Spain and Portugal).<\/p>\n

In the Venice\u2019s ghetto<\/a><\/strong>,\u00a0the two main Jewish styles of cooking<\/strong>, Sephardic<\/strong> (originating from around the Mediterranean in the Middle East and North Africa and extending to Asia) and Ashkenazic<\/strong> (from Northern and Eastern Europe) blended together, combining flavours from the Venetian cooking tradition<\/strong>.<\/p>\n

Classic dishes of Venice\u2019s Ghetto<\/strong><\/p>\n

The Ashkenazi Jews<\/strong> introduced in Venice dishes based on goose meat<\/strong>. Goose fat were put into many recipes, both salty and sweet, and goose meat were used to make salamis<\/strong> (a tradition which is still in place).<\/p>\n

The Levantine merchants<\/strong>, who were allowed to engage in trade with the East, introduced in the Venetian cuisine a range of\u00a0spices and flavorings<\/strong>\u00a0such as saffron and raisins<\/strong>: a traditional dish is frisensal<\/em><\/strong>, a big wheel of pasta (usually tagliatelle<\/em>) baked in\u00a0goose fat, and filled with nuts, raisins, and sausages, combining sweet and salty flavours in a dish with meat.<\/p>\n

The Ponentine merchants,<\/strong>\u00a0from the Iberian peninsula, on the other hand, brought in Venice typical Mediterranean flavours<\/strong>: they introduced sweet and sour recipes<\/strong>, opening the way to one of the Venetian classic dishes,\u00a0sarde in sa\u00f2r<\/strong> (sweet and sour sardines, with onions, raisins and pine nuts).<\/p>\n

Jewish style recipes<\/strong><\/p>\n

In the area of vegetable cookery, the Jewish-style aubergines<\/strong> is certainly one of the most popular dishes of the Venetian Jews. Aubergines, which are commonly used in a wide variety of Jewish recipes in the Mediterranean region, are finely sliced and left to dry in the open air before being deep-fried in oil with a clove of garlic, and served as a summery starter with melon slices.<\/p>\n

Pumpkin<\/strong> is also commonly used by Venetian Jews: many dishes made with pumpkin, typical of the Venetian hinterland, were adapted by the Jews to their own cuisine, such as\u00a0suca frita<\/strong><\/em> (deep-fried pumpkin), suca desfada<\/em><\/strong>, and\u00a0suca baruca<\/em><\/strong>\u00a0(warty pumpkin) also known as suca santa<\/em><\/strong> (holy pumpkin).<\/p>\n

Traditional Jewish desserts<\/strong><\/p>\n

Traditional desserts of Venetian Jews includes a large number of delicious cakes, pastries and cookies. For Passover, Venetian Jews usually make a rich array of unleavened sweets<\/strong>: azzime dolci<\/strong><\/em> (sweet matzah), tasty biscuits enriched with fennel seeds or anuseeds, \u00e0pere<\/strong><\/em>, delicious soft round cakes made up with flour, sugar and eggs, b\u00ecse<\/strong><\/em> (after Venetian bissa<\/em>, i.e.water-snake) which get their name from their s-shape, anez\u00ecni<\/strong><\/em>, flavoured with aniseed, and sucar\u00ecni<\/strong> <\/em>or zuccherini<\/em>, biscuits made as a flat doughnut sprinkled with sugar.<\/p>\n

Other traditional Venetian Jewish sweets are: bolo<\/em><\/strong>, a sweet bread (made with flour, eggs, sugar, oil, candied fruits and raisins), usually eaten at the end of the fast of<\/strong> Yom Kippur<\/strong>,<\/p>\n

one of the most sacred dates in the Jewish religious calendar<\/a><\/strong>. And r\u00e9cie <\/em>di Aman<\/em><\/strong>, \u2018Haman\u2019s ears\u2019, triangular treats made of dough with fruit jam in the middle, traditionally eaten at Purim<\/strong>, a Jewish holiday celebrated much like Carnival<\/strong> (and occurring at almost the same time of the year). \u2018Haman\u2019s ears\u2019 represent a good example of cross-cultural food practise in Venice, as they are very similar to galani<\/em>, traditional Venetian Carnival sweets.<\/p>\n
