Goose fat were put into many recipes, both salty and sweet, and goose meat were used to make <strong>salamis<\/strong> (a tradition which is still in place).<\/p>\n<p>The<strong> Levantine merchants<\/strong>, who were allowed to engage in trade with the East, introduced in the Venetian cuisine a range of\u00a0<strong>spices and flavorings<\/strong>\u00a0such as <strong>saffron and raisins<\/strong>: a traditional dish is <strong><em>frisensal<\/em><\/strong>, a big wheel of pasta (usually<em> tagliatelle<\/em>) baked in\u00a0goose fat, and filled with nuts, raisins, and sausages, combining sweet and salty flavours in a dish with meat.<\/p>\n<p>The<strong> Ponentine merchants,<\/strong>\u00a0from the Iberian peninsula, on the other hand, brought in Venice <strong>typical Mediterranean flavours<\/strong>: they introduced<strong> sweet and sour recipes<\/strong>, opening the way to one of the Venetian classic dishes,\u00a0<strong>sarde in sa\u00f2r<\/strong> (sweet and sour sardines, with onions, raisins and pine nuts).<\/p>\n<div class=\"bee-row bee-row-6\">\n<div class=\"bee-row-content\">\n<div class=\"bee-col bee-col-1 bee-col-w12\">\n<div class=\"bee-block bee-block-1 bee-text\">\n<div class=\"bee-text-content\">\n<p><strong>Jewish style recipes<\/strong><\/p>\n<p>In the area of vegetable cookery, the <strong>Jewish-style aubergines<\/strong> is certainly one of the most popular dishes of the Venetian Jews. Aubergines, which are commonly used in a wide variety of Jewish recipes in the Mediterranean region, are finely sliced and left to dry in the open air before being deep-fried in oil with a clove of garlic, and served as a summery starter with melon slices.<\/p>\n<p><strong>Pumpkin<\/strong> is also commonly used by Venetian Jews: many dishes made with pumpkin, typical of the Venetian hinterland, were adapted by the Jews to their own cuisine, such as\u00a0<em><strong>suca frita<\/strong><\/em> (deep-fried pumpkin), <strong><em>suca desfada<\/em><\/strong>, and\u00a0<strong><em>suca baruca<\/em><\/strong>\u00a0(warty pumpkin) also known as<strong><em> suca santa<\/em><\/strong> (holy pumpkin).<\/p>\n<p><strong>Traditional Jewish desserts<\/strong><\/p>\n<p>Traditional desserts of Venetian Jews includes a large number of delicious cakes, pastries and cookies. For Passover, Venetian Jews usually make a rich array of <strong>unleavened sweets<\/strong>: <em><strong>azzime dolci<\/strong><\/em> (sweet matzah), tasty biscuits enriched with fennel seeds or anuseeds, <em><strong>\u00e0pere<\/strong><\/em>, delicious soft round cakes made up with flour, sugar and eggs, <em><strong>b\u00ecse<\/strong><\/em> (after Venetian <em>bissa<\/em>, i.e.water-snake) which get their name from their s-shape, <em><strong>anez\u00ecni<\/strong><\/em>, flavoured with aniseed, and <em><strong>sucar\u00ecni<\/strong> <\/em>or <em>zuccherini<\/em>, biscuits made as a flat doughnut sprinkled with sugar.<\/p>\n<p lang=\"zxx\">Other traditional Venetian Jewish sweets are:<strong> <em>bolo<\/em><\/strong>, a sweet bread (made with flour, eggs, sugar, oil, candied fruits and raisins), usually eaten <strong>at the end of the fast of<\/strong> <strong>Yom Kippur<\/strong>,<\/p>\n<p lang=\"zxx\">one of the most sacred dates in the <strong><a href=\"https:\/\/www.museoebraico.it\/en\/the-jewish-community\/jewish-festivities\/\" target=\"_blank\" rel=\"noopener\">Jewish religious calendar<\/a><\/strong>.
